GRAHAM CRACKER CAKE

cup butter or margarine, softened

2 cups sugar

5 eggs

1 (16 oz.) package graham crackers, crushed

1 teaspoon baking powder

1 cup milk

1 teaspoon vanilla

1 cup chopped pecans

1 (8 oz.) can crushed pineapple, drained

1 cup shredded coconut

Cream butter, gradually add sugar, beating until well blanded. Add eggs one at a time, beating after each addition. Combine graham crackers and baking powder; add to creamed mixture alternately with milk, beginning and ending with graham cracker mixture. Stir in vanilla, pecans, pineapple, and coconut; blend well.

Pour into a greased and floured bundt pan. Bake at 325 degrees for 1 hour and 20 minutes or until a wooden pick comes out clean. Cool in pan 10 minutes; remove from pan and let cool completely on a wire rack.

COCONUT COOKIES

cup margarine

2 cups vanilla wafer crumbs

1 cup chocolate pieces

cup chopped nuts

1 cup coconut

1 can condensed milk

Melt margarine in a square baking dish; layer wafer crumbs, chocolate pieces, nuts and coconut over margarine. Pour condensed milk over all. Bake at 350 degrees for 30 minutes. Cut in squares when cool.

APPLE NUT CAKE

2 cans apple pie filling

1 package spice cake mix

cup melted butter

2 cups chopped pecans

Put apple pie filling in greased casserole. Combine butter, cake mix and nuts; sprinkle over apples. Bake in a preheated 350-degree oven for 30 minutes, or until done. Serve with frozen Cool Whip.

HAMBURGER BARBE-Q

2 pounds hamburger meat

1 tablespoon prepared mustard

2 tablespoons Worcestershire sauce

cup chopped onion

1 bottle tomato ketchup

cup relish

salt and pepper to taste

1 tablespoon chili powder (optional)

Hamburger buns

Fry hamburger meat; drain. Mix with rest of ingredients. Cook until heated through. Spoon on buns.

APPLE CHIP CAKE

1 cups oil

2 cups sugar

3 eggs, well beaten

3 cups flour

1 teaspoon salt

1 teaspoon soda

3 cups chopped apples

1 cup chopped pecans

2 teaspoons vanilla

Mix together oil, sugar and eggs. Sift together flour, salt and soda. Add to egg mixture. Add apples, pecans and vanilla. Pour into greased and floured tube pan. Bake in a 325-degree oven for one hour or until it tests done.

GLAZE

1 stick margarine

1 cup dark brown sugar

cup milk

In a saucepan, melt margarine and sugar. Add milk and bring to a boil. Boil for 2 minutes. Pour glaze mixture over hot cake. Let sit in pan for 2 hours before removing cake.

If you want to use a bundt pan, remove cake from pan and invert on wax paper before pouring the glaze over it.
