OATMEAL-BLUEBERRY MUFFINS

1 cups quick-cooking oats, uncooked

1 cup all-purpose flour

1 tablespoon baking powder

teaspoon salt

1 egg, beaten

cup buttermilk

cup vegetable oil

cup honey

cup frozen blueberries, thawed

Combine first 4 ingredients in a large bowl, make a well in the center of mixture. Combine egg with next 3 ingredients and add to dry ingredients, stirring until just moistened. Fold in blueberries. Spoon into greased muffin pans, filling two-thirds full. Bake at 375 degrees for 25 to 30 minutes. Remove the muffins from pans immediately. Makes one dozen.

APPLE KUCHEN

cup butter or margarine, softened

1 package Betty Crocker yellow cake mix

cup flaked coconut

1 can (20 oz.) pie-sliced apples, well drained, or 2 cups sliced pared baking apples

cup sugar

1 teaspoon cinnamon

1 cup sour cream

2 egg yolks, or 1 whole egg

Heat the oven to 350 degrees.

Cut butter into dry cake mix until crumbly. Mix in coconut. Pat mixture lightly into an ungreased long pan (13 x 9 x 2 inches), building up slight edges. Bake for 10 minutes.

Arrange apple slices on warm crust. Mix sugar and cinnamon, sprinkle on apples. Blend sour cream and egg yolks (or whole egg) and drizzle over apples. (Topping will not completely cover apples.)

Bake for 25 minutes or until edges are light brown. Do not over bake. Serve warm. 12 to 15 servings.

VARIATIONS

Pear Kuchen -- Instead of the apples, use 2 cans (16 oz. each) sliced pears, well drained and dried on paper towels, and Devil's Food or German Chocolate cake mix.

Peach Kuchen -- Instead of the apples, use 1 can (29 oz.) sliced peaches, well drained and dried on paper towels, and white cake mix.

PLEASING TREATS

Preheat oven to 350 degrees. In a bowl, combine 2/3 cup all-purpose flour and one 14-ounce package flaked coconut. Add one 14-ounce can sweetened condensed milk (I use Eagle Brand), stirring to mix well.

Fold in 1 cup M&Ms plain chocolate candies. Drop by tablespoonfuls onto greased cookie sheets. Bake until golden, about 10 or 12 minutes. Remove to wire rack to cool. Makes about 4 dozen treats.

MICROWAVE FUDGE

1 box confectioners sugar

cup cocoa

cup milk

1 stick margarine

Pecans, as desired

Place ingredients in a microwave-safe bowl. Do not stir! Heat on high for 2 minutes. Add 1 teaspoon vanilla and mix with electric mixer. Add nuts. Pour into buttered dish and refrigerate for 1 hour.

MEAL IN A SKILLET

1 pound ground beef

4 medium potatoes, sliced thin

1 medium onion, sliced thin

salt and pepper to taste

1 (17 oz.) can whole kernel corn, drained

1 (28 oz.) can tomatoes, chopped and undrained

Cook ground beef in a large skillet until browned, stirring to crumble; drain. Arrange potatoes and onions over beef. Sprinkle with salt and pepper. Spread corn and tomatoes over onion; cover and cook over low heat for 40 minutes, or until potatoes are tender.
