CREAMY RICE PUDDING

4 cups milk

1 egg, beaten

1 4-serving-size package vanilla pudding (not instant)

1 cup minute rice

1 cup raisins

1/4 teaspoon cinnamon

1/8 teaspoon grated nutmeg

In a saucepan, gradually stir milk and egg into pudding mix. Add rice, raisins, cinnamon and nutmeg. Stir over medium heat until mixture comes to a boil. Pour into a serving bowl.

PEANUT BUTTER BARS

2 cups powdered sugar

6 graham crackers

1 cup peanut butter

1 stick butter or margarine

1/3 cup peanut butter

6 ounces chocolate chips

Put together powdered sugar and 1 cup peanut butter. Crush graham crackers and mix in. Melt butter and add to above mixture. Press into an 8x8 inch pan. Melt 1/3 cup peanut butter and chocolate chips. Pour on top of mixture in pan. Refrigerate. When set, cut into squares. Kids like these.

CHEESECAKE BARS

1 package yellow lemon cake mix, without pudding

1 stick butter or margarine, softened

1 egg, beaten

1 8-ounce package cream cheese, softened

2 eggs

1 pound (1 box) powdered sugar

1 teaspoon vanilla or lemon flavoring

Combine first three ingredients in a large mixing bowl, mix well. Press mixture into a lightly greased 13x9x2 inch baking pan and bake at 350 degrees for 10 minutes.

Beat cream cheese until fluffy, add eggs one at a time, beating after each addition. Gradually add powdered sugar, beating well. Stir in vanilla. Pour mixture over first layer, spreading evenly. Bake at 350 degrees for 35 minutes. Cool and cut into 1 1/2 inch squares.

SARAH'S CAKE

2 cups all-purpose flour

2 cups sugar

1 teaspoon salt

1 teaspoon soda

1 teaspoon cinnamon

1 teaspoon vanilla

1 1/2 cups oil

3 eggs

1 small can crushed pineapple, drained

2 cups mashed bananas (about 3 large ones)

1 cup chopped nuts

Mix the dry ingredients well, then mix in rest of ingredients but do not beat. Pour into a greased 10-inch tube pan and bake at 350 degrees for 1 hour and 15 minutes. Let cool in pan.

This recipe is a good one, passed to me by Sarah Sawyers, my sister-in-law. It is one she had had for a long time.

MINI MEAT LOAVES

1 pound ground beef

1/2 onion, minced

1 teaspoon salt

1/2 cup fresh bread crumbs

1 can condensed vegetable soup, undiluted

Heat the oven to 450 degrees. With a fork, mix the meat lightly but thoroughly with the rest of the ingredients. Spoon into 12 two-inch cupcake cups and bake in the preheated oven for 15 minutes.
